
DESCRIPTION
This chackchouka recipe is a North African dish made of tomatoes, peppers, spices and eggs. At Wild Girls, we love to serve it on our Sunday brunch with friends and family. Pair it with some pita bread for a delicious meal!
Ingredients
1/2 red pepper
1/2 yellow pepper
1 big red onion
3 tomatoes
1 garlic clove
2 tbsp olive oil
1 tbsp tomato paste
1/4 tsp cinnamon
1/4 tsp smoked paprika
1/4 tsp curcuma
1/2 tsp ras el hanout
200ml water
4 organic eggs
coriander leaves
Preparation
Step 1
Heat the olive oil on medium high heat, add the sliced onions and let it color for a few minutes
Step 2
Then add the spices and cook for 1 minute.
Add the crushed garlic, cook for another minute then add the tomato paste and cook for another minute
Step 3
After a minute, add the diced tomatoes, the sliced peppers and salt and pepper to your liking. Cover and cook for about 10 minutes until the tomatoes are juicy and the peppers are tender (stir from time to time).
Add some water and cook for another 5 to 10 minutes with the lid on
Step 4
Then add the eggs, cover and cook until the eggs are cooked to your liking (we like our yellow to be runny and white well cooked).
Garnish with some coriander leaves and some good quality olive oil.
