FOR THE BREAD:
300 gr spelt flour
6 gr baking soda
300 gr honey
10 gr gingerbread spice mix
170 ml water
FOR THE TOPPINGS :
45-50 gr pecan nuts
100 gr maple syrup
FOR THE BREAD
Preheat your oven at 150 degrees on fan mode.
In a bowl, add the flour, baking soda and the gingerbread spice mix and stir well. Then add the water and honey and mix again.
In a 20-25 cm length cake mold place some baking sheet, pour the bread mixture and bake on the oven for an hour.
FOR THE TOPPING :
Toast your pecan nuts in a pan for 3-5 minutes. Add the maple syrup and cook on low heat until the maple syrup thickens and gets a caramel consistency.
Once the gingerbread is done, let cool and remove from cake mold. Do your maple pecan caramel and pour on top of the bread.
