DESCRIPTION

The title says it all ! Harissa veggies with white beans spread. You can always pair it with the harissa cod recipe.

Ingredients

FOR THE WHITE BEANS SPREAD :

  • Some harissa paste to your liking mix with olive oil

  • 1can white beans

  • Zest of 1/2 lemon

  • Juice of 1/2 lemon

  • Olive oil

  • Salt

  • Wild Girls crackers

FOR THE VEGGIES : 

  • 1 red pepper

  • 2 red onions

  • 1 brocoli

  • 1 yellow courgette

  • Olive oil

  • Smoked paprika

  • Salt 

Preparation

Step 1

  • Cut the veggies and drizzle some olive oil, salt and somked paprika and mix. Then place in the oven for approx 30mins at 200°C on fan mode. 

Step 2

  • In the meantime rince the beans and mash them with a fork. Add the zest, lemon juice, and salt and continue mashing to the consistency of your liking. Then drizzle some olive oil and harissa. 

Top the spread with your veggies and some Wild Girls crackers and enjoy!!
