If you didn’t know yet we are garlic lovers and this soup without garlic is boring ! Don’t even dare to omit the garlic ;);)
FOR THE SOUP :
1.2 kg tomatoes
50 ml olive oil + a bit to drizzle
1 bulb of garlic
Pinch of salt
FOR THE HALLOUMI "CROÛTONS" :
250 gr halloumi
2 tsp maple syrup
Pinch of black or white sesame seeds
1 tsp olive oil
Cut the garlic in 2 and put in 2 aluminium foils with a bit of olive oil and salt.
Place the tomatoes on a baking tray, drizzle the olive oil, sprinkle some salt, add the garlic and place in the oven for 45 minutes at 200 degrees on fan mode.
In the meantime, slice the onions and caramelize them in a pan with olive oil for approximately 8-10 minutes or until golden. Set them aside.
Once the tomatoes are ready, put them in a blender, open the foil and press the garlic, add the onions and mix everything until smooth.
Once the soup is ready to be served, prepare your halloumi « croûtons ». Dice the halloumi and fry it in the pan with or without olive oil. Once grilled on both sides, add the maple syrup and the sesame seeds and cook for a few seconds.
Assemble your soup.
To add extra flavor we drizzled our soup with some basil infused olive oil, but this is totally optional.
