Corn Tortilla

This tortilla is ready in less than 5 minutes and it's the perfect nutritious meal.



  • 100 gr corn flour

  • 80 gr corn starch

  • 90 ml water

  • Sel

  • 3 tbsp olive oil


  • 600 gr sweet potato

  • 1/2 tsp cumin

  • 1/2 tsp paprika

  • 1 tsp sriracha

  • Avocado

  • Red cabbage

  • Coriander

  • Lime

  • Olive oil

  • Salt/ pepper


Step 1 

For the tortilla:

  • In a bowl, mix the corn flour, corn starch and salt. Add the water and the olive oil and knead the dough for a few minutes.

  • Roll the dough into 6 balls.

  • Place each ball between 2 baking sheets and flatten them with the back of a pan.

  •  Cook each tortilla for a few minutes on each side, flipping it when it becomes golden.

Step 2 

For the filling:

  • Mash the avocado with some salt and lime juice.

  • Shred the red cabbage and pickle with some salt, lime juice and olive oil.

  • Shred the sweet potato and cook in a pan with some oil, add the cumin and the paprika and cook for approximately 5-10 minutes. Add the sriracha at the end.

Step 3 

To assemble the tortilla:

  • Spread the mashed avocado, top with some sweet potato, add more sriracha for extra punch, add the picked cabbage and a few coriander leaves.
