
DESCRIPTION
Ready in 30 minutes this red lentil Dahl is easy to make and full of flavors.
Ingredients
300 gr red lentils
140 gr onions (2 medium onions)
3 cloves garlic
400 ml coconut milk (410 gr)
2 cm ginger (10 gr)
2 tsp curry powder (6 gr)
1 tsp cumin powder (2 gr)
1/2 tsp curcuma (1 gr)
500ml vegetable stock
2-3 tbsp olive oil
1/2 tsp salt (5 gr)
Preparation
Step 1
In a saucepan, heat the olive oil over medium heat. Add the onion and a pinch of salt. Sauté for 4-5 minutes over medium heat, stirring occasionally, until the mixture softens.
Step 2
Add the garlic and the ginger and continue to sauté for a 1-2 minutes over medium heat.
Step 3
Add the curry powder, cumin and turmeric. Stir well. Cook for another minute to let the flavors of the spices bloom.
Step 4
Rinse the lentils in a sieve. Add the coconut milk, lentils, vegetable broth and salt to the mixture. Bring to a boil and reduce the heat to low. Cook with the lid ajar for about 15-20 minutes (or until the lentils are tender). Stir occasionally so the lentils don't stick to the bottom of the saucepan. Add a little water if needed.
