Got The Dahl 2.0

DESCRIPTION

This is seriously a very easy recipe that's ready in 30 minutes! A winning gluten free and vegan meal. Dahl is one of the best dishes to warm you up in winter!

Ingredients

  • 250 gr red lentils (previously soaked for 15min and drained)

  • 5 garlic cloves

  • 1 big chopped onion

  • 1 can peeled tomatoes

  • 3 tbs lime juice

  • 1 tbs tomato purée

  • 1 tsp curcuma

  • 1 tsp chili flakes

  • 2 tsp garam masala

  • 750ml vegetable broth

  • 2-3 tbs sunflower oil

  • Salt and pepper (at your convenience)

TOPPINGS/SERVE WITH

  • quinoa

  • yogurt of your choice

  • cherry tomatoes

  • avocado

  • spring onions 

  • coriander

Preparation

Step 1

  • Heat the oil in a pan on medium heat, then add the onions and cook them for 4-5 mins.

  • Add the garlic and cook it for 1-2 mins.

  • Add all the spices and let the spices blend with the onions and the garlic for 1-2 mins.

  • Add the tomato paste and let it cook for another 1-2mins so that all the flavors mix all well together.

Step 2

  • Stir in the lentils, the peeled tomatoes, the lime juice and the vegetable broth and mix for a few minutes.

  • Bring the mixture to a boil.

  • Once the mixture has come to a boil, reduce the heat to low and cook it covered for about 25mins, mixing occasionally, and then 10mins uncovered.

Step 3

  • Serve it with rice and don't forget to add the toppings. 

NOTES

You can swap the spices and use your favorite ones. For an Indian feast pair this recipe with the chicken Tandoori.
