Pad Thai Style Leftover Rice Balls

We decided to try the rice balls Tik Tok trend, Wild Girls style!


  • 2cups cooked brown rice

  • 1/2 cup water

  • Salt

  • Brocoli

  • Carrots

  • Beans sprout

  • Roasted peanut

  • Wild Girls ginger sweet chili oil (recipe on our Instagram feed)

For the carrot and beans sprout sauce :

  • 1tsp sesame oil

  • 1tsp neutral oil

  • 1tsp Apple cider vinegar

  • 1tsp fish sauce

  • The juice of 1/2 lime

  • Small garlic clove

  • Pinch of ginger powder

  • Salt and pepper


Step 1 

  • In a mixer blend the rice and the water until having a puree consistency.

Step 2 

  • In a pan dry out the moisture of the rice. This will take between 6 to 8 minutes (check the video on instagram for the consistency).

Step 3 

  • Roll them into bite size balls and set them aside.

Step 4 

  • Sauté the brocoli with some olive oil and reserve.

Step 5 

  • Cook the balls until golden and add them to the brocoli..

Step 6 

  • Prepare the salad dressing and mix it with the carrot and beans sprout.

Step 7 

  • Pour the ginger sweet chili oil on top of the balls, sprinkle some peanuts and eat all together !!!
