Red Lentil, Quinoa and Carrot Patties

DESCRIPTION

This is your perfect weekend meal prep for a good start to the upcoming week.
Check it out, it’s very easy and perfect for freezing ;)
We used these patties in a superfood salad bowl but you can enjoy it in a burger or on its own.

Ingredients

FOR THE PATTIES : 

  • 100 gr red lentil

  • 100 gr quinoa

  • 250 ml vegetable stock

  • 2 tbsp ground flaxseed (approx. 12-15 gr)

  • 4 tbsp water (approx. 65 gr)

  • 150 gr chopped onion

  • 350 gr shredded carrot

  • 80 gr gluten free flour

  • 1/2 tsp paprika

  • 1/2 tsp cumin

FOR THE SALAD (you can use whatever topping of your choice)

  • Avocado

  • Shredded beetroot

  • Baby leaves

  • Roasted nuts

  • Onion sprout

  • Chive

  • Sesame seed

FOR THE DRESSING : 

  • 100 gr coconut yogurt

  • 5 gr chive

  • 2-3 gr basil

  • 1 tbsp olive oil

  • Salt to taste

Preparation

FOR THE PATTIES : 


Step 1 

  • Cook on low heat the lentil and quinoa in the vegetable stock until water is absorbed.

Step 2 

  • Mix the ground flaxseed and the water and let rest for 10-15 minutes.

Step 3 

  • Cook the onions in some olive oil/ coconut oil. Once almost cooked add the paprika and cumin and cook for another minute.

Step 4 

  •  In a bowl, add the carrots, the cooked lentil and quinoa, the onion and flax egg, mix well. Add the flour, mix until fully incorporated.

  •  Form your patties (we made approx. 16 patties).

You can easily freeze the patties and cook them directly from the freezer whenever you want.


FOR THE DRESSING : 


 Put all the ingredients in a blender and blend until smooth.
