The Brussels Willis Salad

DESCRIPTION

An autumn salad with seasonal veggies!

Ingredients

FOR THE SALAD :

  • Brussels sprout

  • Roasted pumpkin

  • Granny Smith apple

  • Pistachio

  • Cranberry

  • Grated pecorino or vegan cheese (for a vegan option)

FOR THE SAUCE :

  • 30 ml olive oil

  • 15 ml apple cider vinegar

  • 10 gr blackcurrant grain mustard or plain grain mustard

  • Sichuan pepper

  • Pinch of salt

Preparation

Step 1

  • Cut the pumpkin in cubes and put in the oven with a bit of salt and olive oil for more or less 25 minutes at 180 degrees on fan mode.


Step 2

  • In the meantime, grate the Brussels sprouts, the pecorino cheese and cut the apple in cubes.

Step 3

  • Combine all the ingredients and enjoy!
