DESCRIPTION
An autumn salad with seasonal veggies!
Ingredients
FOR THE SALAD :
Brussels sprout
Roasted pumpkin
Granny Smith apple
Pistachio
Cranberry
Grated pecorino or vegan cheese (for a vegan option)
FOR THE SAUCE :
30 ml olive oil
15 ml apple cider vinegar
10 gr blackcurrant grain mustard or plain grain mustard
Sichuan pepper
Pinch of salt
Preparation
Step 1
Cut the pumpkin in cubes and put in the oven with a bit of salt and olive oil for more or less 25 minutes at 180 degrees on fan mode.
Step 2
In the meantime, grate the Brussels sprouts, the pecorino cheese and cut the apple in cubes.
Step 3
Combine all the ingredients and enjoy!
