Why should tzatziki always be made with cucumber?
Let's do it pink this time! PIMP your beetroot
Ingredients
For the tzatziki:
400 gr yogurt
150 gr grated beetroot
1 small crushed garlic clove
Juice and zest of 1/2 a lemon
Mint
Salt
For the lentils:
100 gr cooked green lentils
Zest of 1/2 a lemon
olive oil
Salt/ pepper
For the topping:
Pistachios
Olive oil
Preparation
Step 1
For the tzatziki:
In a bowl, mix the yogurt, grated beetroot, garlic, lemon juice and zest and mint. Salt to your taste.
Step 2
For the lentils:
Cook and drain the lentils.
Once the lentils have cooled down a little add some olive oil and the zest of 1/2 a lemon.
Salt and pepper to your taste.
Enjoy!
