Coconut Rice

To make the perfect quick and easy dinner make this coconut rice with the salmon teriyaki recipe (main dishes section)
It’s the perfect match.


  • 280gr jasmin rice

  • 130ml water

  • 70ml coconut milk

  • 3 garlic cloves

  • 1 big tbsp coconut oil

  • Organic grated ginger

  • Chopped spring onion

  • Pinch of salt


  • green part of the spring onion

  • Lime zest


Step 1

  • Rinse the rice

Step 2 

  • In a saucepan add the coconut oil and once the pan is hot pour the white part of the onion.

Step 3

  • Cook the onions for 2 minutes and add the garlic.

  • Grate the ginger.

  • Add the rinsed rice.

Step 4

  • Add the boiling water and the coconut milk. Bring to a boil, put the lid and turn down to low heat for 10 minutes. Turn down the heat and leave the rice for 20 minutes. (Don’t remove the lid).

Step 5 

  • After 20 minutes, remove the lid and fluff up the rice with a fork.

Step 6 

  • Grate some zest, add the green part of the onion and enjoy with our salmon teryaki recipe!
