Corn Ribs

DESCRIPTION

Corn ribs are the perfect vegan alternative. All you need is a sharp knife and some spices ;)
You will never eat your corn as before, they are so crispy!!

Ingredients

FOR THE CORN RIB:

  • 2 corns

  • 20gr agave syrup

  • 2 tsp smoked paprika

  • 1 tsp paprika

  • 1 tsp cumin powder

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp Salt

  • 2 tbsp olive oil

FOR THE SAUCE:

  • 150gr coconut yogurt

  • Juice of 1 lemon

  • 10gr fresh coriander

  • Salt and pepper

FOR TOPPING: 

  • Spring onions 

Preparation

Step 1

  • Cut the corns in 4, add all the spices, the olive oil and mix well. Place in the oven at 220°C on fan mode for approx 30 minutes.

Step 2

  • While the corns are in the oven, prepare the sauce by blending all the ingredients of the sauce.

Step 3

  • Once the corns are ready, drizzle some sauce and top them with spring onions !! 

Enjoy !  

NOTES

Works great in an air fryer also.
