These roasted sweet potatoes have a crispy caramelized exterior and a soft irresistible interior! Wanna impress your guests, go for this recipe!! The toppings we added to the dish makes it very fresh !
400gr Sweet potatoes
Wild Girls zaatar
Peel and cut the sweet potatoes in chunky pieces.
Boil the sweet potatoes in salted water for about 10 minutes (the sweet potatoes should be half done).
Pour some olive oil onto a baking sheet.
Add the sweet potatoes and smash them using a glass and a piece of baking sheet.
Drizzle some more olive oil on top of the sweet potatoes and some flaky salt.
Bake the sweet potatoes in the oven until crispy on the bottom for 20-25 minutes, flip them and bake them for another 10 minutes until super crispy.
In the meantime, prepare your sauce mixing the coconut yogurt with some olive oil, a crushed garlic clove and some salt.
Top the sweet potatoes with the sauce, some Wild Girls zaatar, pomegranate and mint.
