These impressive baked potatoes are so easy to do (easier than it looks ;)) Slice them thinly and bake them for a crunchy result and an amazing flavor !
1 kg potato
30 ml olive oil
30 gr butter
2 crushed garlic cloves
Few sprigs of rosemary
Optional: kale and tomato
Preheat the oven at 200 degrees on fan mode.
Wash the potatoes properly. Check that no mud is left on them. Pat dry on a kitchen towel. We like to use organic potatoes as we leave the skin on.
Using a sharp knife, stand cutting the potatoes into 2-3 mm thick slices till the middle. Do not cut all the way through.
Place the potatoes and the rosemary sprigs on a baking rack, pour the olive oil on top and cook for 1 hour and 15 minutes.
Melt the butter and add the crushed garlic and pour them on the potatoes.
Put the potatoes back in the oven for another 15 minutes. If you like, you could add now some kale and tomatoes.
The potatoes should be crispy on the outside and soft on the inside.
