The Winter Rainbow Salad

DESCRIPTION

We know that a salad a day is what really keeps the doctor away ;)
Try this vibrant, exciting and scrumptious recipe, you will want to dig your fork into it immediately.

Ingredients

FOR THE SALAD : 

  •  180 gr grated raw beetroot

  •  180 gr grated carrots

  • 200 gr cooked quinoa

  •  200 gr edamame

  • 1 cubed avocado

  • 1 thinly sliced green onion

  • 100 gr baby spinach leaves

  • Roasted mix of seeds (we used chia seeds, sunflower seeds and flaxseeds)

FOR THE VINAIGRETTE :


  • 20 gr Dijon mustard

  • 40 gr lemon juice

  • 30 gr red wine vinegar

  • 60 gr olive oil

  • 1 small garlic clove

  • 20 gr parmesan

  • Salt and pepper to taste

Preparation

Put all the ingredients in a bowl, add the vinaigrette and enjoy!
