Try this vibrant, exciting and scrumptious recipe, you will want to dig your fork into it immediately.
Ingredients
FOR THE SALAD :
180 gr grated raw beetroot
180 gr grated carrots
200 gr cooked quinoa
200 gr edamame
1 cubed avocado
1 thinly sliced green onion
100 gr baby spinach leaves
Roasted mix of seeds (we used chia seeds, sunflower seeds and flaxseeds)
FOR THE VINAIGRETTE :
20 gr Dijon mustard
40 gr lemon juice
30 gr red wine vinegar
60 gr olive oil
1 small garlic clove
20 gr parmesan
Salt and pepper to taste
Preparation
Put all the ingredients in a bowl, add the vinaigrette and enjoy!
