As the pumpkin season is on, this is one of the variations you can do with this amazing veggie. It has more flavor than a simple potato chip. It is not fried so you can really enjoy it with no guilt!
Slice the pumpkin ery thinly with a mandolin
Powder the corn starch on your baking sheet then add the sliced pumpkin and lightly powder again the corn starch on top.
Add a bit of olive oil, thyme and flaky salt and place in the oven for approximately 15-20 minutes at 200°C on fan mode (depending on the thickness of the slices and on the oven you are using, so check regularly).
